You can also substitute the cola for root beer if you prefer hints of cinnamon and cloves.
All leftover pork can be frozen.
BBQ Pulled Pork Sandwiches
Yields 4 to 6 servings
Ingredients
- 2 pork tenderloins (1 to 1 ½ pound each)
- 2 onions, sliced
- 1 tablespoon garlic powder
- Salt & Pepper
- 1 ½ cup barbecue sauce
- 12 oz. can of cola soft drink
- 4 to 6 buns
- coleslaw
Directions
Generously season the
tenderloins with salt, pepper and garlic powder.
Add the tenderloins and sliced
onion to a resealable bag, label and freeze.
Put the pork and onions in the
slow cooker.
Add the can of soft drink, cover
and cook on low for 8 hours or high for 4 hours.
Remove the tenderloin from the
slow cooker and place in a large dish.
Dispose of the cooking liquids.
Using two forks, shred the
meat, discarding any fat.
Place the pork in a large bowl
and stir in the barbecue sauce.
To serve, place about ⅔ cup of
the pork on the bottom of each bun.
Top with creamy coleslaw and dill pickles.
