BBQ Pulled Pork Sandwiches

I have to admit I’m not a big fan of soft drinks. I find them too sweet and truth be told I would much rather eat my calories than drink them. When a good friend of mine revealed that the secret ingredient of her amazing pulled pork recipe was cola soft drink, it tickled my curiosity and I had to try it. The result is surprisingly delicious and easy to prepare.

You can also substitute the cola for root beer if you prefer hints of cinnamon and cloves.


All leftover pork can be frozen.





BBQ Pulled Pork Sandwiches
Yields 4 to 6 servings

Ingredients

  • 2 pork tenderloins (1 to 1 ½ pound each) 
  • 2 onions, sliced 
  • 1 tablespoon garlic powder 
  • Salt & Pepper 
  • 1 ½ cup barbecue sauce 
  • 12 oz. can of cola soft drink
  • 4 to 6 buns
  • coleslaw


Directions

Generously season the tenderloins with salt, pepper and garlic powder.

Add the tenderloins and sliced onion to a resealable bag, label and freeze.

Put the pork and onions in the slow cooker. 
Add the can of soft drink, cover and cook on low for 8 hours or high for 4 hours.
Remove the tenderloin from the slow cooker and place in a large dish.  Dispose of the cooking liquids.
Using two forks, shred the meat, discarding any fat.
Place the pork in a large bowl and stir in the barbecue sauce.
To serve, place about ⅔ cup of the pork on the bottom of each bun.
