Coconut Shrimp with Honey Mustard Sauce



Coconut shrimps are a delicious and healthy snacks to serve at your next party.  

You can prepare the shrimps in advance and freeze them to bake them later.  Coat the shrimps with the coconut mixture, place them on a parchment lined baking sheet and freeze flat.  Once the shrimps are frozen, place them in an airtight container and freeze for later.  You don't even need to thaw the shrimps before baking them in the oven!



You will want to peel and devein the shrimps before coating them with the coconut mixture.  First remove the legs and peel off the shell with your fingers, keeping the end of the tails.  To devein the shrimps, make a small incision on the bottom (think of it as the belly of the shrimp) until you see a dark coloured vein.  Run the tip of the knife along the vein to remove it and discard it.

Coconut Shrimps

Ingredients
§  3 egg whites
§  1 teaspoon sea salt
§  ½ teaspoon freshly ground black pepper
§  1 teaspoon garlic powder
§  1 pound large shrimps, peeled and de-veined, tails left on
§  2 cups unsweetened coconut flakes

Directions
Preheat the oven to 425°F.
Whisk the egg whites with the salt, pepper and garlic powder in a large mixing bowl.
In a large shallow bowl, pour ½ of the coconut mixture
You don’t want to pour all the coconut at once; the dry mixture will become too soggy and will not coat the shrimps well.  Once the flakes are too soggy, add another ½ cup of coconut flakes.
Dip each shrimp in the egg white mixture, letting the excess drip back into the bowl.
Coat them with the coconut flakes.
Dig the shrimp in the egg mixture a second time and coat with more coconut, pressing onto the shrimp to coat well.
Place the shrimp on a large parchment lined baking sheet.
Spray the shrimps with a bit of cooking spray.
Bake for 6 minutes.
Turn the shrimps over, spray the other side with more cooking spray and cook for another 5- 6- minutes or until the coconut is golden brown and the shrimp are bright pink.
Serve with the honey mustard sauce.


Honey Mustard Sauce

Ingrdients
§  ¼ cup mayonnaise
§  2 tablespoons yellow mustard
§  1 tablespoon Dijon mustard
§  3 tablespoons honey
§  ½ tablespoon fresh lemon juice

Directions
Combine all the ingredients in a small bowl and mix well
Allow melding in the refrigerator overnight.
