Lobster Tails


I love lobster but I have to admit that this was the first time I actually cooked lobster tails.   I had no clue how to prepare them so I asked my favorite East Coaster C.  She gave me this quick and easy recipe to cook lobster in the oven.  It’s AMAZING!

C. recommends cooking the tails at 375°F instead of broiling them.  This method may take a few more minutes but your patience will be rewarded with juicy and tender tails.



Lobster Tails

Ingredients
  • 2 lobster tails
  • 1 tablespoon butter (or garlic butter), melted
  • Spicy lime butter for dipping


Directions
Preheat the oven to 375°F. 
Using kitchen shears, cut the shell on the back of the lobster all the way to the base of the tail.






































Open the shells along the cut you made.  When the opening is large enough, gently pull out the lobster meat and sit it on top of the shell.
Brush the lobster meat with the melted butter.

Place the tails on a aluminum foil lined baking sheet.
Cook for 10 to 15 minutes in the oven, depending on the size of the tails.  Keep an eye on the tails, you DO NOT want to overcook them or the flesh will be dry and chewy.



Spicy lime butter
  • 4 tablespoons butter
  • 3 garlic cloves
  • Zest of 1 lime
  • Juice of ½ lime
  • Pinch of cayenne pepper


Melt the butter (in the microwave or in a small sauce pan)
Using a garlic press, crush the garlic cloves to release all its flavours.  Add to the melted butter.
Incorporate all the remaining ingredients.
Serve warm.
